Spumante brut Mapoi
The spumante Mapoi is produced using the long Charmat Process and possesses the qualities of an Extra Brut.
The nose detects a characteristic mineral note due to the presence of magnesium in the soil, the taste is a well-balanced wine all the way to end, never bitter thanks to the natural mellowness of our grapes.
The name derives from the fact that the sparkling wine was vinified for the first time in 1985. We very much enjoyed its taste, but there was a lot of work associated with its production. We continued to postpone working on this sparkling wine: yes, we must do it again, BUT THEN…, not this year etc. After 30 years of procastinating, we finally produced it and called it in Italian MAPOI (but then)!
Matching: its very balanced acidity and not excessive mellowness make this spumante suitable for any meal and not only as an aperitif.
